Ham '"n Swiss with Rice Salad
A Pillsbury Classic - serve with crusty rye bread and pineapple chunks
Yield: 4 servings
Preparation Time: 15 minutes; Chilling Time: 1 hour, 35 minutes
Ingredients

SALAD:
|
|

cups |
cold cooked long-grain white rice (cooked as directed on package)
|
|

diced cooked ham
|
|
1 |
cup |
(4 oz.) Swiss cheese, diced
|
|
1/2 |
cup |
thinly sliced celery
|
|
4 |
cups |
coarsely sliced romaine lettuce
|
|
|
|
|
|
|
|
DRESSING:
|
|
1/2 |
cup |
nonfat sour cream
|
|
1/3 |
cup |
lite mayonnaise or lite salad dressing
|
|
1 |
teaspoon |
cream-style horseradish, if desired
|
|
2 |
teaspoons |
prepared mustard
|
|
Directions:
In large bowl, combine cooked rice, ham, cheese and celery; toss to mix.
In small bowl, combine all dressing ingredients; blend well. Pour over rice mixture; toss to coat.
To serve, place 1 cup lettuce on each of 4 plates. Spoon rice mixture evenly onto lettuce.
