Black Bean and Hominy Salsa
Ingredients

black beans, cooked, rinsed and drained

(15 oz.) golden hominy, rinsed and drained

avocado, diced
|
|
|

yellow bell pepper, diced
|
|
|
| 1/2 |

red onion, chopped
|
|

| 1/4 |

fresh cilantro, chopped
|

jalapeno, minced and seeded
|

| 1/2 |
cup |
salsa, prepared (refrigerated-style)
|
|
|
|
|
salt and pepper to taste
|
|
|
Directions:
In a large bowl, combine black beans, golden hominy, avocado, yellow bell pepper, red onion, fresh cilantro and jalapeno. Add salsa; gently toss. Taste and add salt and pepper as needed.
