Spanish Rice

Yield: Makes 1 1/2 cups or 3 serving
Ingredients

unsalted butter or margarine

chopped onion

small clove garlic, minced

(6 ounces) V-8 Low Sodium Cocktail Vegetable Juice

regular long-grain rice
|

small green pepper, cut into strips

|
Directions:
1. In 1-quart saucepan over medium heat, in hot butter, cook onion with garlic until onion is tender. 2. Stir in V-8 Juice, rice and green pepper. Heat to boiling. 3. Reduce heat to low; cover. Simmer 25 minutes or until rice is tender and liquid is absorbed, stirring often.
